2007 L'Aventure Paso Robles Estate Cabernet Sauvignon

Stephan Asseo left his life as a vigneron in Bordeaux after 17 vintages to find a world class terroir from which to materialize his dream of a new Cabernet Sauvignon/Syrah/Petit Verdot blend. While touring the wine regions of California, Stephan discovered and fell in love with Paso Robles’ west side. The unique terroir with its deep calcareous and siliceous soils, rolling topography of the Santa Lucia foothills, and dramatic Templeton Gap maritime influence, provided exactly what he was looking for to complete his vision.  
 
He purchased his property in 1997 and began planting a high density vineyard of 2,100 vines per acre to encourage competition among the vines, naturally reducing yields. His rigorous approach to shoot thinning and cluster dropping results in yields of just 2 tons per acre which translates to one bottle per vine!  
 
All you have to do is taste his Cabernet/Syrah/Petit Verdot blends Optimus and Estate Cuvée to see for yourself why Robert Parker refers to Stephan as “one of the bright, shining reference points for the region” who has “captured the magic of Paso Robles.”
