2007 Gundlach Bundschu Estate Vineyard Sonoma Valley Cabernet Sauvignon

24 individual vineyard blocks were sustainably farmed and vinified in 25 separate lots to craft the '07 Gundlach Bundschu Estate Cabernet Sauvignon. Seven to thirty-year-old vines are planted on the steep hillsides where warm days and cool nights produce an elegantly-structured, balanced and lush Cabernet Sauvignon. The fruit was night harvested by hand, cold-soaked for three to five days with up to 28 days skin contact for most lots, and aged 16 months in 100% French oak barrels, 40% new.
The 2007 Sonoma County, California growing season gave the winemakers nearly perfect, mild climatic conditions, resulting in low yields and wines of excellent concentration. Intense aromas of black currant and blueberry, laced with vanilla. This red wine has a lush entry that fills the mouth with rich flavors of dark berry, cassis and ultra dark chocolate. Big, smooth tannins give weight and roundness to the mouthfeel. Concentrated berry and anise flavors linger through the exceptionally long finish. Delicious upon release but also can be cellar aged for four to fifteen years from vintage.
