2007 Amista Morningsong Vineyards Dry Creek Valley Chardonnay
One 750ml bottle
Amista continues to make a crisp, classic chardonnay — no oak, no butter. Like the 2005 Chardonnay (which was awarded 91 points by the Wine Enthusiast) this vintage again shows green apple and white peach flavors with a mineral finish. It was fermented and aged in neutral oak barrels (used for several vintages). The wine was not inoculated with ML culture, but allowed to proceed with slow malolactic (secondary) fermentation started by the residual ML culture on the grapes and in the barrels. The fermentation and aging style prevents the formation of di-acetyl, resulting in a clean, crisp, classic Chardonnay with no oak aroma or taste, and no "butter." It pairs beautifully with sole piccata or shrimp risotto with preserved lemon.
